Mafia Shrimp Scampi
2 lbs.shrimp (about 15 per pound)
1 stick butter
1 shallot chopped fine (or green onions)
3 cloves garlic crushed and chopped fine
2 cups lite sour cream
2 Tbsp. chopped chives
1 tsp. garlic powder
Remove shell from shrimp.
Melt butter in saucepan. Add shallots and garlic. Saute for 3-5 minutes over low heat. Add sour cream and stir. Add chives and garlic powder. Simmer over low heat for about 30 minutes stirring occasionally until it thickens.
Broil, boil or cook shrimp in microwave. Be careful you don’t overcook them. Pour sauce over shrimp and serve over rice or noodles.

This is my all time, very favorite shrimp scampi recipe! There’s nothing else like it. I have a close connection to this recipe as my mother is best friends with the authors daughter so I have a signed copy of this book and cherish it. When I think of shrimp scampi I can’t consider having it any other way!
